After completing this module, you will be able to do the following:

  • Describe the Big 9 foods that can cause allergic reactions.
  • Describe what an allergic reaction is.
  • Describe labeling requirements.
  • Correctly define the difference between Cross-Contamination and Cross-Contact.

Module 2: Back of the House
After completing this module, you will be able to do the following:

  • Identify allergen information on Food Labels.
  • Understand how to order, receive and store foods for allergen safety.
  • Describe how to clean to minimize Cross-Contact.
  • Understand the methods for Preparing, Cooking, and Plating Allergen Special Orders.
